Carne Pizzaiola

Carne Pizzaiola is a Neopolitan dish that is very hearty! Meat is cooked with peppers, onions and tomatoes until it is tenderized. Braising the meat creates a delicious broth that goes perfectly with pasta. It’s the perfect meal for this Autumn day… Continue reading
Roasted Gazpacho
I love using the veggies in my garden every summer. This soup is so good and if you don’t have a garden, you can pick up all these great veggies at your local farmers market. I roasted most of the veggies – it’s so good, so healthy… I could eat this every day. Continue reading
Stuffed Pepper Pizza

My Hubby came home early yesterday for a long lunch. So while he was taking a dip in the pool I decided to serve him a little lunch poolside. For an easy go to pizza I like to use Naan bread so I always keep some in the freezer. Also the garden has begun to produce some nice green peppers so I just thought… Stuffed Pepper Pizza. Super quick and easy and we were both enjoying lunch poolside! Continue reading
Vaca Frita

As I’ve said before, Alma de Cuba is one of my favorite restaurants in Philadelphia. I’ve shared my version of their Skirt Steak and today’s I’m sharing my version of another favorite – Vaca Frita! Vaca Frita means fried cow in Spanish. In the traditional recipe, flank steak or skirt steak are cooked twice creating a delectable dish. My recipe uses boneless chuck roast instead of skirt steak for two reasons – first, I’m serving four people and a chuck roast is just the perfect size for us and second, skirt and flank steaks are just so darn expensive for the smallest steak. I have to say that after shredding and frying the roast no one would have been able to tell the difference! This is another winner – the combined flavors of the fried shredded meat along with the onions & peppers was stupendous…and with the addition of a side of Spanish Red Rice and Goya Maduros…all I can say is WOW! Go ahead, give it a try…all of these flavors together are just incredible! Continue reading
Coconut Curry Rice Soup

If you’re anything like me you are always cooking too much! Last month I made Coconut Curry Chicken. Well, I made it again this weekend and frequently my dinners turn into soups for lunch. I don’t usually post them, but this soup was so good it merits being made just for the soup. A real winner in my book. Continue reading
