Spanish Red Rice
1 tablespoon extra virgin olive oil
1 small onion, diced
3 heaping tablespoons tomato paste
3 garlic, minced
1 1/2 cups rice
1/2 teaspoon cumin
1/2 teaspoon cilantro
1/2 teaspoon thyme
1 teaspoon salt
fresh ground pepper (to taste)
2 tablespoons Worcestershire sauce
3 cups water
In a medium saucepot, heat the oil, onion and tomato paste on medium heat.
Sauté for five minutes; stirring frequently. Add the minced garlic and sauté another minute. Add the rice.
Stir to combine and continue cooking a few more minutes; adding the cumin, cilantro, thyme, salt & pepper.
Stir in the Worcestershire sauce and water. Bring to a boil; reduce heat to low, cover and simmer 15 minutes until rice is tender.
Place rice in a serving dish and squeeze with the juice of the lime. Serve.
