Crème Brûlée Oatmeal

This is a delicious breakfast…creamy oatmeal with a crunchy crust…it can be served in little ramekins so that each person has their own little creamy-crunchy yummy oatmeal…and since there’s egg in it you’ve got your protein too…one powerfully packed little breakfast…

Crème Brûlée Oatmeal
1 tablespoon sugar
1 tablespoon brown sugar
1 egg yolk
1 cup milk
1/2 tsp pure vanilla extract
1/2 cup Old Fashioned Oats

Combine the sugar and the brown sugar in a bowl. In a saucepan, whisk the egg, milk, and vanilla with 1 tablespoon of the sugar mixture. Bring to a rolling boil; add the oats. Stirring constantly, reduce heat to a simmer and cook 5 minutes until oats are cooked and liquid has absorbed. Pour into two ramekins. Sprinkle with remaining sugar mixture. Place under the broiler until caramelized and crispy – being careful not to burn (3-4 minutes). Makes 2 servings.
