Started my morning off with a warm bowl of oatmeal topped with blueberries then toasted some almonds and flaked coconut for additional sweetness…so comforting and healthy!
Oatmeal with Blueberries, Toasted Almonds & Toasted Coconut
1/2 cup Old Fashioned Oats
1 cup milk
1/2 tablespoon sugar
1/2 teaspoon vanilla
pinch salt
handful fresh blueberries
2 tablespoons sliced almonds
2 tablespoons flaked coconut
Place the oats with the milk, sugar, vanilla and salt into a small saucepan. Bring to a boil; reduce heat and simmer 5 minutes, stirring occasionally. Meanwhile rinse the blueberries. Heat the oven to broil. Spread the almonds and coconut on a baking sheet and heat under the broil 2-4 minutes until lightly toasted. Pour the hot cooked oatmeal into a bowl. Top with the blueberries and toasted almonds & coconut. Delicious!

Thanks! I reduced the amount of sugar in the oatmeal and this little bit of toasted coconut added just the right amount of sweetness back in! 🙂
