Talk about comfort food… I am in love with this soup! Hearty and light, simple and delicious! I used spinach to finish it off this time because that’s what I had, but you can use escarole for a little crunch. You can also add chicken and tomatoes if you don’t want to use ham. I seriously recommend giving this soup a try… Oh, by the way it’s always better the next day.
Ham & Cannellini Bean Soup
2 cups chopped up cooked ham
1 onion diced
3 cans Cannellini Beans drained and rinsed
6 cups chicken stock
4 cups fresh spinach
1 tsp celery salt
2 tsp fresh ground pepper
several slices toasted crusty bread
Sauté the onions in a soup pot until tender. Add the stock, beans, celery salt & pepper. Bring the soup to a simmer. Next add the ham; heat through. Last add the fresh spinach and allow to wilt in the soup. Serve with a crusty bread… Delicious!!!

Oh my gosh I was going to make this soup today! Have cannellini beans and ham hocks. Didn’t get it started in time so it will be tomorrow’s dinner. Now I have time to pick up spinach. Great idea!
