Sun Dried Tomato, Prosciutto & Spinach Pasta

Last night around 7 o’clock I was so tired…I didn’t really want to make dinner, but we were hungry and going out wasn’t an option…I was just too darn tired. So after a trip to the fridge and the pantry, I made a quick inventory of what I could put together…Pasta!!! As it turned out, it was absolutely delicious, super simple and just what the doctor ordered!!! 

Sun Dried Tomato, Prosciutto & Spinach Pasta
1 lb package pasta (I used angel hair)
3 cloves garlic sliced
1/4 lb shaved Prosciutto
1 cup sun dried tomatoes cut julienne
2 cups fresh spinach
1/2 cup fresh basil
1/2 cup olive oil
1/2 cup chicken stock
1/2 Pecorino cheese
1/2 cup fresh parsley
1 tsp Italian seasoning
salt & pepper

In a sauté pan heat 1/4 cup of the olive oil on low then add the garlic, Italian seasoning and Prosciutto. Heat them slowly until they begin to crisp. Next add the sun dried tomatoes and basil. Cook for a few minutes then add the white wine and cook an additional 5 minutes. Add the spinach, then the chicken stock and cook for 5 minutes more. Toss with remaining olive oil, parsley and Pecorino cheese. So simple, so delicious!!!
