My very good friend and ‘soul sister’ Lisa Marie makes this fantastic potato salad…she brings it to our frequent pot luck get-togethers…it’s so good that everyone asks for it all the time…so I just had to get the recipe from her! There’s not an ounce of mayo in this baby – so no refrigeration is required. It’s a terrific addition to an outdoor summer pool party or barbecue. Continue reading

Grilled Eggplant with Sun-Dried Tomato Vinaigrette

Sometimes I grill these eggplants on the new charcoal grill we bought and sometimes I pop them on my grill pan on the stove-top. Either way they’re sure to please! The Sun-Dried Tomato Vinaigrette is so good – and it can be used on more than just these deliciously grilled eggplants… Continue reading
Mediterranean Wheat Salad

As Heidi mentioned on Tuesday, this week we’re sharing two healthy salads…today’s salad is made with Khorasan wheat, which comes from an ancient whole grain original to the Mediterranean region that is now also grown in Montana USA. This particular brand is Kamut – organically grown – with a rich, nutty flavor. Combined with caramelized onions, mushrooms, sun-dried tomatoes and spinach and topped off with feta cheese and pine nuts, it’s an explosion of flavor in every bite! This salad is even hearty enough for a Meatless Meal… Continue reading
Meatloaf Sliders With Sundried Tomato Aïoli

Almost every Friday from January to April my Hubby offers lunch to his staff. This time of year they are so busy… and as often as I can I make it for them. Spoiling people is what I love to do and it is always an honor to share my love of food with them. Well, this time I made Meatloaf sliders on a little Ciabatta dinner roll with a really pungent sundried tomato aïoli. The aïoli added that strong flavor you would get from the ketchup concoction that usually gets baked on top of a meatloaf. They were a huge hit and were just perfect with my Creamy Cheesy Tomato Soup! Continue reading
Sun Dried Tomato, Prosciutto & Spinach Pasta

Last night around 7 o’clock I was so tired…I didn’t really want to make dinner, but we were hungry and going out wasn’t an option…I was just too darn tired. So after a trip to the fridge and the pantry, I made a quick inventory of what I could put together…Pasta!!! As it turned out, it was absolutely delicious, super simple and just what the doctor ordered!!! Continue reading
Zucchini Risotto With Sun Dried Tomatoes & Scallops
Taking this dish out of Linda’s playbook, I decided to make a risotto. With so much zucchini being produced in the garden, I am actively engaged at using them in as many ways as possible. Well, this was a winner! So full of flavor and depth. The rice soaks up every bit of flavor you add and richly delivers them to you with every bite… Continue reading
Sundried Tomato Parmesan Cheese Spread

Born out of my love for sundried tomatoes (and not wanting to turn on the broiler)… I made this cheese spread to be a cold version of my Baked Sundried Tomato Dip. It was a real hit with my guests and a definite go to for me in the future. Continue reading
Black Bean Burger With Sun Dried Tomatoes, Basil & Goat Cheese

I really like veggie burgers, but I have to admit I prefer to make my own. I get the occasional Falafel when I am in the city, but at home it’s black bean burgers for me. I like to switch them up with different flavor profiles and this time it was with basil, sun dried tomatoes and a smear of creamy goat cheese. Yummy… Continue reading
