Born out of my love for sundried tomatoes (and not wanting to turn on the broiler)… I made this cheese spread to be a cold version of my Baked Sundried Tomato Dip. It was a real hit with my guests and a definite go to for me in the future.
Sundried Tomato Parmesan Cheese Spread
2 cups whipped cream cheese
1 cup sundried tomato pesto
3 cloves garlic chopped
1 onion diced
3/4 cup Parmesan cheese
1/3 cup white wine
2 tbs olive oil
Heat the olive oil, garlic and onion together until the onions and garlic begin to caramelize. Add the wine and cook until all the liquid is cook out. Add all the ingredients together in a mixing bowl. Gently mix the ingredients together until they are all incorporated.
Put the spread in a serving bowl and serve with your favorite cracker or veggie. Simple and Delicious!!!
