Summer is winding down and school is upon us – but the heat outside is still sizzling…just like this salad! A healthy fare of grilled asparagus combined with the sweet & savory flavors of grilled peaches and blackberries. Drizzled with a delightful Maple Vinaigrette and topped off with tart crystalized ginger, hearty Brazil nuts and ricotta salata….It’s so incredible that I wish I’d created this salad at the beginning of summer! Then I’d have been able to enjoy it all summer long…
Grilled Asparagus, Peach & Blackberry Salad
1 bunch asparagus, tough ends removed
1 large ripe peach, sliced
handful fresh ripe blackberries
5-6 cups mixed salad greens
1/2 cup Brazil nuts, chopped
a few pieces crystalized ginger, chopped
1/2 cup chopped Ricotta Salata cheese
Maple Vinaigrette (recipe below)
Heat a large grill pan over high heat. Place asparagus in pan and drizzle with a little extra virgin olive oil; season with salt and pepper. Lower heat to medium and grill 8-10 minutes; turning occasionally. Remove from grill pan.
Place peach slices in the same skillet and grill 1-2 minutes on each side.
Make the Maple Vinaigrette: in a jar combine 1 tablespoon white wine vinegar, 1/4 teaspoon salt, 2 tablespoons pure maple syrup and 3 tablespoons extra virgin olive oil. Put on the lid and shake vigorously.
Gather the remaining ingredients and start to assemble the salad. Place the mixed salad greens in a large dish. Layer the grilled asparagus and peaches on next. Top with the blackberries, Brazil nuts, cyrstalized ginger & Ricotta Salata.
Drizzle on the Maple Vinaigrette (as much or as little as you desire) and serve immediately.
