Crêpes With Spinach & Ham And Chive Butter
My Hubby loves it when I make him Crêpes! These versatile, very thin pancake-like wraps can hold up to whatever you put in and on them. Today I used leftover ham, sauteed spinach and a cheesy bechamel. I topped it off with some chive butter and it was heaven on a plate!

1 cup all purpose flour
2 large eggs
1/2 cup water
3/4 cup milk
2 Tbs melted butter
1/2 tsp salt

Spinach & Ham and Chive Butter
1 cup chopped ham
2 Tbs butter
3 Tbs flour
1 cup milk
1/2 cup shredded cheddar cheese
1 bag baby spinach

Chive Butter
3 Tbs melted butter
2 Tbs chopped fresh chives

In a blender place all the Crêpe ingredients and blend for only a few seconds. Set mixture aside and allow to rest while you prepare your filling.

In one sauce pan melt 2 Tbs of butter. Add the diced ham and cook for a few minutes, then add the flour and cook an additional 1-2 minutes. Next add the milk and the cheese along with a pinch of salt & pepper. Turn the heat to low and allow to thicken. In a separate pan heat 1 Tbs of butter and wilt the spinach.

In a non stick skillet heat a little butter on medium and add about 1/3 cup of the Crêpe batter. Lift the handle and rotate the pan at a 30 degree angle until you spread the batter in a thin layer over the surface of the pan. After about a minute turn the Crêpe over and repeat. Remove to a plate and repeat again and again until all the batter is used. Note: the first Crêpe will be the worst one and the last Crêpe will be the best one.

Place the Crêpe on the plate and spoon mixture on or in the Crêpe as you desire. Drizzle with melted butter and chives and take your first bite! Delicious!

    1. Thank you… and yes, I add a little sugar to the batter if I am going to make sweet crepes. My son likes them with chocolate hazelnut butter.


    1. I agree. My son loves them in summer for breakfast with Nutella! I like them for dinner with my garden ratatouille… I’ll be making them when my garden bursts with veggies!
