I’ve been into making different types of deep dish pizzas for lunch during the week. This week I made one with a Béchamel Sauce adding both Provolone & Pecorino cheese. I topped it with a Caesar Salad and dove in! What a hearty and fresh bite; heavy on the garlic…Yum! Continue reading

Classic Moussaka

We are huge fans of Greek food…I make a lot of it at home and we also head over to our favorite Greek spots a few times a month (Estia Taverna and Black Olive)…but had never made Moussaka at home until this past weekend…I didn’t want to follow anyone else’s recipe – I knew the flavors very well since I’ve eaten it many times at restaurants…so I sat down and wrote my ideas out in my cooking notebook…shopped for all the ingredients ….then gave it a whirl on Sunday afternoon. It turned out superb! Definitely restaurant quality (can I toot my own horn and say even better than restaurant quality?!) I roasted the eggplant and baked the layer of potatoes before assembling the remaining layers; bringing out the delicious flavors of both, while the beef simmered in a tomato sauce seasoned with cinnamon, allspice and ginger. The final layer is a custard-like béchamel sauce topped with a mix of shredded cheeses…truly scrumptious! Continue reading
Spinach Lasagna Roll Ups
Who doesn’t love lasagna. I find this easy roll up version to be great for entertaining due to the perfect individual sizes. It also becomes great for changing the inside flavors. For instance along with the spinach version I made a turkey sausage version. The possibilities are endless so I suggest you roll with it… Hahaha! Continue reading
Hot Reuben Crock Dip
Linda and I are only two of three sisters. Our third sister is the dip master – as in she loves to make dips. She has her go-to dips as we all do and this Reuben Dip is one of them… Sort of…??? Actually, I changed it because I was taking it to an outdoor pool party and I didn’t want to ask the hostess if I could use her oven on a hot day to heat my dip. This got me thinking of how I could make it in a way that it could just stay hot without putting out the hostess. By starting with the base of a Bechamel I was able to keep it warm for a long time and still have a consistent texture. It worked great and was a hit at the party! Sometimes you just have to think outside the box! Continue reading
Chicken Cordon Bleu Mac & Cheese

If you remember my post about the Chicken Cordon Bleu Stuffed Shells, I told you… If you have some mixture left over don’t throw it away! I’ll be using it another way in a post coming up soon. Well, this is it. I froze what was leftover, but if you are making it without the leftovers, here’s how… I made it for the girls at my Hubby”s office for lunch and they said it was the best Mac & Cheese they ever had!!! Yay!!! Continue reading
Lobster & Shrimp Mac & Cheese

I’ve had versions of this dish in restaurants, but it’s the kind of dish that if you can’t find it and you want it you have to make it. Dipping lobster in butter is one thing, plucking it out of butter and cheese is a whole other experience! If you get the chance, give it a go… It’s worth it! Continue reading
Chicken Cordon Bleu Stuffed Shells

Wow, wow, wow!!! So much flavor, so creamy and so easy. The end result tastes like a creamer version of Chicken Cordon Blue. Continue reading
Creamy Cheesy Tomato Bisque
This is the perfect comfort soup when you want a creamy bisque. My Hubby is not a fan of tomato soups, but he loves my Creamy Cheese Tomato Bisque. This soup is as creamy as it is smooth and I love that I’m not dicing and roasting anything. I highly recommend giving this one a try! Continue reading
Chicken A La Princess

I named this after me… My Hubby calls me Princess, so I always feel like one. Anyway, when Linda and I were growing up our mother used to make chicken a la king. It wasn’t my favorite, but I always loved the Popovers she would make with them. Although I’ve never had success with popovers before, I finally found out why one day when I was checking out Food Wishes… Don’t preheat the oven! Now I can make popovers with confidence and gusto! So with that in hand, I set out to make a chicken A La something that I would like, so here it is! Chicken A La Princess… Continue reading
