I made these little treats as a hearty appetizer to serve pool side for a girls swim date…small tortillas make perfect little wedges when quartered. Both flour and corn were served – the corn was a gluten-free option for one of my guests who doesn’t eat flour. Tuna Noodle Stuffed Peppers
Our garden is still producing copious amounts of green peppers. I am literally overflowing with them. Stuffed pepper soup along with stuffed peppers, western omelets and green pepper salads have been on the menu. Trying to think of new ways to use them has become a daily challenge. Well yesterday I was also missing my grandmother and whenever I think of her I always think of my Classic Tuna Noodle Casserole… It was one of her favorites. So I decided to make it, but instead of a casserole, I would stuff the peppers with it. Turned out to be really good. I love when that happens! My son graduated and we threw a huge party this weekend. It was so hot and everyone was going to be in and around the pool. I didn’t want any mayonnaise based dressings so I opted for a vinegar based dressing. It was very delicious and no one missed the mayo at all… although my son did break my camera which is the reason for the not so good picture.  Continue reading
