When we visited Lauderdale-by-the-Sea last summer I saw a Teriyaki Burger on the menu at Aruba Beach Cafe. Their burger was a beef burger with grilled pineapple and Monterey Jack cheese…sounded really good to me! I actually didn’t order it but it’s been in the back of my mind ever since. So for today’s post I decided to create my own version of a Teriyaki Burger using ground chicken marinated in Honey Teriyaki sauce with fresh minced garlic. Instead of Monterey Jack I found a Mango Fire Cheddar cheese that was both sweet and spicy and used a fresh onion roll to provide the perfect tangy balance. The end result was delicious! So juicy that you may have to keep a few napkins on hand…
Caribbean Teriyaki Burger
1 lb ground chicken
2 tablespoons Ken’s Honey Teriyaki Marinade & Sauce
2 garlic cloves, minced
4 slices fresh pineapple
4 slices Mango Fire Cheddar cheese (or Monterey Jack)
4 fresh onion rolls
Teriyaki-Mayonnaise (recipe below)
Gather your ingredients.Β Combine the ground chicken, Teriyaki marinade & minced garlic. Shape into burgers.Β Spray a skillet with cooking spray and cook burgers about 5 minutes on each side. Meanwhile, spray a grill pan with cooking spray and grill pineapple slices 2-3 minutes on each side.
During the last few minutes of cooking, add the slices of Mango Fire Cheddar cheese to the cooking burgers and allow to melt. In a small bowl combine 1 tablespoon Teriyaki Marinade with 2 tablespoons mayonnaise; whisk well to combine flavors.
To assemble Caribbean Teriyaki Burgers: slice onions rolls in half. Spread some Teriyaki Mayonnaise on both halves. Place a burger on each bun along with the grilled sliced pineapple and top bun. Take a big bite out of this juicy and delicious burger…don’t forget you’re going to need a few napkins to wipe all those juices off of your fingers!

I know this is all about the burger but look at that grilled pineapple – drooling or what!!! Back to the burger! We’ve not had ground chicken in the house for ages – what a fantastic idea… I’ll see if hubby can get some tomorrow as the UK is hotting up and this looks like delicious barbecue food! Yum! One of my favorite guilty pleasures is the Banzai burger at Red Robin.. I love how you’ve given this a healthier twist with the chicken!
