My husband was in the mood for something sweet – so he says to me, “I want a Bizcocho!” Now, I’ve been married to this man for over thirty years and not once have I heard of this ‘Bizcocho’. “What is that?”, I replied. “It’s a cake”, he says. A cake that he used to get at a little bakery around the corner from his house growing up. No wonder I didn’t have a clue what it was – but after a little research I found that ‘Bizcocho’ is actually a word that applies to many sweet desserts; cake, cupcakes, cookies…basically anything sweet sold at a bakery! So I concocted my own Bizcocho and named it ‘Bizcocho de Caramelo’. Note: This dessert has been featured on Fiesta Friday!
Bizcocho de Caramelo
1 1/2 cups flour
2 teaspoons baking powder
1 teaspoon salt
2 large eggs
1 cup sugar
1 teaspoons vanilla extract
1/2 cup milk
1/2 cup – 3/4 cup caramel syrup (I used Hershey’s)
1 cup heavy cream (chilled)
1/2 cup mascarpone cheese
3/4 cup powdered sugar
Heat the oven to 350 °F. In a mixing bowl, sift the flour, baking powder and salt. In a larger mixing bowl, combine the eggs, sugar and vanilla. Beat on medium high for 8 minutes until fluffy and light yellow in color. Slowly mix in the milk and flour mixture, scraping the bowl well, until all is incorporated. Pour into a greased 13″x 9″ baking dish and bake in the oven for 25 minutes. Remove from oven and allow to cool for 20 minutes. Using a skewer, poke holes in the cake. Drizzle the caramel syrup over the entire cake and let it soak into the poked holes. In a large bowl, combine the heavy cream, mascarpone cheese and powdered sugar. Using an electric mixer, blend until soft peaks form. Spread mascarpone frosting over top of Bizcocho.
When ready to serve; cut a piece of cake and place on a plate. Drizzle with extra caramel syrup and serve!

Drool…looks delicious! I love desserts that are not chocolate. I am going to do this one with a salted caramel sauce that I make. Maybe with some candied bacon on top. 🙂 Thanks for getting my wheels spinning. Oh yeah, did the hubby like it? Lol…I’m sure it was a hit!
