A local restaurant serves a delicious Limoncello Cake…when I asked about it they told me they order it from a big bakery in upstate New York that sells only to restaurants…too bad…I would order it so often they’d think I own a restaurant! Instead I’ve decided to try and recreate it at home – it’s going to take a few tries I think. This first cake came out very rich and dense with a definite hint of lemon. I’ll be aiming for light and fluffy in the next try but had to share this recipe because it just tasted so good…

These little treasures are great to make and have in the fridge for a plethora of occasions. I serve them at dinner parties and give them as gifts in pairs every Valentine’s Day to friends and family. Today I made 40 of them for a bridal shower as a favor to take home and bake… but of course my Hubby and I had to have a little sample so I could show you how awesome and easy they are… (now there are only 38). My husband was in the mood for something sweet – so he says to me, “I want a Bizcocho!” Now, I’ve been married to this man for over thirty years and not once have I heard of this ‘Bizcocho’. “What is that?”, I replied. “It’s a cake”, he says. A cake that he used to get at a little bakery around the corner from his house growing up. No wonder I didn’t have a clue what it was – but after a little research I found that ‘Bizcocho’ is actually a word that applies to many sweet desserts; cake, cupcakes, cookies…basically anything sweet sold at a bakery! A few months ago we were invited to a wine & cheese party at a friend’s house. Everyone was to bring a wine and appetizer or dessert from a certain country or region. My husband and I chose the Lombardia/Piedmont regions in Northern Italy. We brought along some fabulous Nebbiolo, from the Piedmont region, which borders the Lombardia region on the west. And since I knew that Mascarpone cheese was made in the Lombardia region I wanted to find a dessert that complimented the wine. After searching for a while I found a chocolate cake that used mascarpone in its icing. The cake was flourless, and I had never made a flourless cake before, but I decided to give it a try. Boy am I glad I did…it was absolutely delightful!
When I made the cake back in February my boys could only take a peek – no bites for them! So last night I made it again so they could taste it too…they loved it…and so will you! Continue reading
