This is one of my favorite seasonal flatbreads…perfect for those long winter lunches with your friends…
Roasted Butternut Squash, Sausage, Ricotta & Mozzarella Flatbread
16 oz pkg Sweet Italian Sausage
20 oz pkg Butternut Squash Chunks
2 tablespoons extra virgin olive oil
salt & fresh ground pepper
1 cup BelGioioso Ricotta Con Latte
12 oz Formaggio Fresh Mozzarella Balls
Fresh Sage Leaves
Heat oven to 450°F. While oven is heating up, grill Sweet Italian Sausage links until fully cooked (~20 minutes) on medium-low heat; slice. Toss butternut squash chunks with extra virgin olive oil and season with salt & pepper. Roast in the heated oven 20-25 minutes until tender. Spread 1/4 cup fresh ricotta on each flatbread. Top with grilled sausage slices, roasted butternut squash, mozzarella balls and fresh sage leaves. Bake 10-12 minutes until cheese has melted. Serve hot. Makes 4 servings.
