My son Gabe first tried the Harry Potter Butterbeer in Universal Studios a few years ago and has been itching to taste it again…after buying a bottled version of it at It’s Sugar in Ocean City, NJ this past weekend, he was disappointed by the lack of quality and flavor…when he returned home he asked me to help him recreate one that tasted more like the original at Universal…here’s his version that turned out just the way he liked it!
Gabe’s Homemade Butterbeer
1 cup crushed ice
1 cup butterscotch ice cream
1/4 cup caramel syrup
3 tablespoons softened butter
2 cups cream soda
1 cup heavy cream
1/2 cup caramel syrup
1/4 cup powdered sugar
In a blender, combine the crushed ice, butterscotch ice cream, 1/4 cup caramel syrup and softened butter with the cream soda. Blend until creamy. Using an electric mixer, beat the heavy cream until soft peaks form, gently stir in the remaining caramel syrup and powdered sugar. Pour the butterscotch beer into a glass; top with the caramel whipped cream and a drizzle of extra caramel.
