
A strata is a great dish to serve when you are having a brunch and need an easy make-ahead meal for a group. I made this strata for a group of friends to close out the summer. Served at room temperature with a salad, I was able to enjoy my friends without worrying about the kitchen. It turned out to be a slightly overcast day, but we had a lot of fun anyway.
Asparagus And Potato Strata
6 eggs
2 medium potatoes, peeled and diced small
1 1/2 cups diced asparagus
1 cup shredded Swiss cheese
1 onion, diced
2 Tbs butter
salt & pepper
3 Tbs flour
Heat oven to 350°F. In a skillet sauté the onions in 1 Tbs butter until tender. Butter a casserole dish and layer the bottom with the diced potatoes. Whisk the eggs and flour together adding salt and pepper. Toss in the cheese and asparagus. Pour over the potatoes and cook for about an hour. Serve warm or at room temperature with a salad. Delicious!

Very nice. Looks delicious. I have made a very similar one though I usually add a ham or bacon to mine, but yours is a good alternative for vegetarians.
