The perfect breakfast with leftover smoked salmon… My Honey and I enjoyed this breakfast this morning with the leftover smoked salmon from the Super Bowl…. Fly Eagles Fly!!! We, (Linda included) are huge Philadelphia Eagles fans and are so very proud and excited for our team!!! Anyway, this was a very simple and delicious breakfast.
Smoked Salmon Potato Hash & An Egg
4 medium sized potatoes shredded (red potatoes are best)
1/2 onion diced
1/2 green pepper diced
1 cup flaked smoked salmon
1/4 cup chopped parsley
salt & pepper
1 tsp celery salt
1 Tbs olive oil
4 eggs
Heat the oil in a cast iron skillet on medium heat. Add the onions, peppers and shredded potatoes and cover for 5 minutes. Stir every few minutes until the mixture begins to soften. Once the veggies are soft, add the parsley, salmon, celery salt, salt & pepper. Turn up the heat, press the mixture down in the pan to get a nice crust on the potatoes. In a separate skillet fry the eggs. Once you have accomplished the crust on the potatoes that you desire, remove from the heat; divide among four plates and top each portion with a fried egg… Delicious!
