It’s TACO TUESDAY! I didn’t used to be a fan on corn tortillas, however I have become fond of them. This taco especially is great on the corn tortilla. With a squeeze of lime and the refreshing slaw it is the perfect complement to the spicy chicken. What a perfect dinner for Taco night.
Adobo Chicken Taco With Lime, Cilantro Slaw
2 chicken breasts on the bone
1 chipolte pepper in Adobo sauce chopped
1 onion diced
2 tsp cumin
3 garlic cloves minced
1 tsp celery salt
2 cups shredded cabbage
1/2 cup mayonnaise
2 limes
1/2 cup cilantro chopped
1 red onion sliced
sour cream
cheddar cheese
salt & pepper

Preheat the oven to 325°. Roast the chicken for 45 minutes then remove it from the bone and pull apart with two forks. In olive oil, sauté half the onion, and the garlic until tender. Add the shredded chicken, chipolte pepper in Adobo sauce, celery salt and cumin. Mix the cabbage with the other half of the diced onion, lime juice, mayonnaise, cilantro, salt & pepper. Heat the corn tortillas, top with meat, slaw, sour cream, sliced red onion and cheese. Squeeze a little lime on top and dig in. Delicious!!!
