Easy & Elegant Potatoes In Wine
If you are anything like me, you entertain a lot!!! I am always looking for quick, delicious and easy ways to impress my guests and enjoy their company at the same time. These potatoes do just that. So full of flavor, elegant on the table and easy as the day is long. I love to make these at Christmas too since they can also be done in a larger quantity and in the oven…
Easy & Elegant Potatoes In Wine
5 medium red potatoes
3 onions halved and sliced
1 cup dry white wine
1/2 cup chicken stock
2 Tbs butter
1 Tbs fresh tarragon
salt & pepper

In a skillet melt the butter and sauté the onions until just tender.

Peel and slice the potatoes about 1/6 inch thick but keep the slices together. Fan each sliced potato out over the onions like the picture below. Add a generous amount of salt & pepper, the cup of wine and the chicken stock. Place a few sprigs of tarragon on top. Cover and cook on medium high for 10 minutes. Turn the heat down to a simmer and cook an additional 8-10 minutes more.

Remove the lid and serve in the pan. The onions are caramelized and rich and the potatoes have absorbed all the lovely flavors and liquid. Delicious!
