I was missing my excellent Grandmother again… (click to read a little more about Dorothy). She used to make Gołąbki for us sometimes. I’ll admit that as a youngster I was not a huge fan, but as an adult I’d really begun to appreciate it. She made the best ever Gołąbki. This is my slightly healthier version of hers…
Turkey Gołąbki With Sauerkraut And Tomatoes
1 head cabbage boiled in water for 10 minutes
1 lb ground turkey
1/2 lb loose pork breakfast sausage
1 onion diced
1 egg
3/4 cup unseasoned bread crumbs
1 tsp salt
1 tsp pepper
1 16 oz can diced tomatoes rinsed and drained
16 oz can tomato sauce
Preheat the oven to 350 °F. In a mixing bowl add the turkey, pork, diced onion, egg, bread crumbs and salt & pepper. Mix lightly to incorporate all the ingredients together. Lightly peel the boiled cabbage leaves away from the head and set aside. In each leaf place a small handful of the rinsed and drained tomatoes, a large meatball size of the meat mixture and top with a small handful of sauerkraut. Fold and roll the mixture inside the cabbage and place seam side down in a roasting pan. Top with the remaining tomatoes, the remaining sauerkraut and the can of tomato sauce. Cover the dish with plastic wrap and then tinfoil and bake for 45 minutes. Remove the covering and cook an additional 15 minutes. Delicious!!!
