Chipotle Beef Tacos with Sautéed Mushrooms & Onions & Avocado


It’s Taco Tuesday! On tonight’s menu is a spicy beef taco accompanied by sautéed mushrooms and onions and topped off not with cheese but with avocado! Add a dollop of sour cream and this taco is absolute heaven in your mouth…

Chipotle Beef Tacos with Sautéed Mushrooms & Onions & Avocado
2 lbs ground beef
canola oil
1 tablespoon cumin
1 tablespoon paprika
1 tablespoon chili powder
1/2 – 1 teaspoon Chipotle chile pepper (or more depending on your taste for spicy!)
salt & fresh ground pepper
1/2 cup beef broth
1 large Spanish onion, sliced
2 garlic cloves, minced
8 oz sliced cremini mushrooms
1 ripe avocado, sliced
sour cream
10 soft tortillas

In a large skillet, cook ground beef in 1 tablespoon canola oil on medium-high heat. Add cumin, paprika, chili powder, Chipotle chile pepper, 2 teaspoons salt and fresh ground pepper. Stir occasionally and cook until beef is cooked.

Meanwhile, in another skillet, heat 1 tablespoon canola oil over medium-high heat. Add sliced onions, mushrooms and garlic. Sauté until onions are tender (10-15 minutes); then season with salt & pepper to taste.

Slice the avocado and drizzle with a little oil and season lightly with salt & pepper. Heat the tortillas as package directs.

To assemble: Spread some sour cream on the tortillas, top with spicy ground beef, sautéed mushrooms and onions, and avocado slices. Devour!!
