Tourtière (Canadian Meat Pie)
I’ve been making this dish for over thirty years…I always just called it Beef Pie…recently I saw a recipe with very similar ingredients called Tourtière…which is actually a Canadian dish made with beef and potatoes that originated in the Provence of Quebec – the vessel it is made in is called a Tourtière…so now I’m calling my dish Tourtière too! It’s another one of my hubby’s favorite meals as it’s very hearty and perfect to serve in early Autumn… Continue reading
Classic Moussaka

We are huge fans of Greek food…I make a lot of it at home and we also head over to our favorite Greek spots a few times a month (Estia Taverna and Black Olive)…but had never made Moussaka at home until this past weekend…I didn’t want to follow anyone else’s recipe – I knew the flavors very well since I’ve eaten it many times at restaurants…so I sat down and wrote my ideas out in my cooking notebook…shopped for all the ingredients ….then gave it a whirl on Sunday afternoon. It turned out superb! Definitely restaurant quality (can I toot my own horn and say even better than restaurant quality?!) I roasted the eggplant and baked the layer of potatoes before assembling the remaining layers; bringing out the delicious flavors of both, while the beef simmered in a tomato sauce seasoned with cinnamon, allspice and ginger. The final layer is a custard-like béchamel sauce topped with a mix of shredded cheeses…truly scrumptious! Continue reading
Rigatoni with Four Meat Ragù

My husband’s favorite pasta dish is this one…half of what he loves about it is that every time we make it, we make it together. We open a bottle of wine, put on some music and start cooking! The four different meats; sausage, pancetta, ground beef and ground pork are cooked until very tender in a delicious tomato sauce. We have served this yummy pasta dish for many family and friend get-togethers…it’s always a huge hit. Continue reading
The Liberty Burger

I’ve had my eye on this ‘Liberty’ Burger for quite a while…I first saw it on our local Smashburger menu a few years ago. I don’t think it’s there anymore; but I came across some notes about it recently and decided that this would be the perfect burger to make to help celebrate our ‘Liberty’ – you know, Independence Day and all that! So here’s my take on it… Continue reading
Cheeseburger Chowder

What a great soup this is for a cold day like today! I made this soup for my kids while they were growing up and they just loved it. Today I made it for my Hubby and the result was the same… He just loves it! Creamy, comforting and just perfect to chase out the chill. Continue reading

Simple Shepherd’s Pie

With the weather getting cold outside, I just wanted some simple comfort food to serve my Honey for lunch. This little dish really hit the mark when he walked in the door and smelled the comforting aroma and was served his personal steaming Shepherd’s Pie. Continue reading
Spaghetti Bolognese: Revisited

As I mentioned on Wednesday, I haven’t had time to cook this week so I’m revisiting two of my favorite meals. Wednesday I shared my favorite risotto of all time: Mushroom & Sausage Risotto and today I’m sharing Spaghetti Bolognese. We eat Spaghetti Bolognese at least once a month!!… Continue reading
