Cheeseburger Chowder

What a great soup this is for a cold day like today! I made this soup for my kids while they were growing up and they just loved it. Today I made it for my Hubby and the result was the same… He just loves it! Creamy, comforting and just perfect to chase out the chill.

Cheeseburger Chowder
1/2 stick of butter
1/4 cup (+) flour
2 1/2 cups whole milk
1/2 lb ground beef
1 onion, chopped
2 cups grated Monterey Jack Cheese
1/2 cup grated American cheese
2 large potatoes
salt & pepper

Poke holes in the potatoes to let out steam and microwave on high for 12 minutes. Set the potatoes aside to cool. In a large pot, sweat the diced onion in the butter until tender. Add the ground beef and cook until the beef is slightly browned. Add the flour and stir in for about one minute. Next add salt, pepper and the milk.

Continue cooking on medium until the milk starts to steam, but is not scolding hot. At this point, remove from the heat and add the grated cheeses; adding the American first. Rotate on and off the heat until all the cheese has melted into the milk. Cut up the potatoes into desired bite sized pieces and add them to the chowder. Delicious!!!
