Today was a simple lunch with lots of flavor. My honey and I sat outside and enjoyed our fabulous fajitas. Too bad he had to go back to the office or I would have made some of Linda’s excellent Springtime Sangria. This is a great dish for lunch or dinner…
1 package chicken steak chicken
1/2 tsp each *
*ground coriander seed
*Perfect Pinch Fiesta Citrus
1 Tbs olive oil
1 red pepper sliced
1 green pepper sliced
2 onions sliced
2 cloves garlic sliced
4 wheat tortilla
1/2 cup shredded cheddar cheese
Sauté peppers, garlic and onion in olive oil until tender. Remove pepper & onion mixture from pan and set aside. Add chicken to pan and all the *spices. Sauté until chicken is cooked.
Heat tortilla and layer with sour cream, chicken, pepper & onion mixture and top with cheese.
