Summer corn on the cob…what vegetable is as sweet and delicious as that? I saw this delicious recipe on Farm Raised Cooking. Jessica’s recipe caught my interest so I decided to give it a try. Jess cooked hers on the grill but it was raining so I had to make some adjustments…..we loved it! Thanks Jessica!
Cilantro-Parmesan Buttered Corn on the Cob
4 Ears of corn, stalks & silk removed
2 tablespoons butter
1/2 teaspoon cilantro
1/2 teaspoon salt
fresh shaved Parmesan cheese
Place corn in a pan of water. Bring to a boil and cook 7-10 minutes until corn is tender; drain. Add the butter to the pan and melt. Stir in the cilantro and salt. Place the corn back in the pan and roll in the melted butter. Remove to a plate and drizzle with the butter and shaved cheese.
Enjoy!

I have to look for some corn on the cob at the farmers market this week and try this. It looks delicious and I love corn on the cob.

Oh my goodness this looks amazing!!!!!! I cannot wait to try it. I’m a huge fan of cilantro. And butter. And Parmesan cheese. And corn. Pretty much everything in the ingredient list.

Looks great – have you tried cooking the corns in the oven with the husks on? It works a treat and I think the result beats cooking in water…..

Yep! It does taste better but takes a wee bit longer – I’ve also cooked them in the microwave with the husks on (4 minutes each) and that went pretty quick! 🙂
