When the corn in season is about to be no more…I buy a few dozen, cut the corn off the cob then freeze the corn to be used in the fall and winter. So when I make this rich and creamy soup the corn is about as fresh as it gets this late in the season. Corn & Pepper Jack Cheese Chowder

On Wednesday I made a terrific Spinach & Creamy Spinach Soup. Today’s soup is equally delicious but with a kick! It’s the perfect blend of sweet and hot! The corn brings this beautiful sweetness at the front, then after two or three bites you start to notice a little heat! A very balanced corn soup. It’s Taco Tuesday! My favorite day of the month when I experiment with new and different flavors for tacos…This is another taco that I found on a menu from Fuego Tortilla Grill. I’ve never actually been there but I sometimes will spend time just perusing restaurant menus to get ideas and this one grabbed my attention. It’s called Cowboy Tacos and it listed Dr. Pepper BBQ sauce as one of it’s ingredients…that sounds tempting…doesn’t it!? But why let all the Cowboys have the fun?
