Don’t Throw Away That Sauce!

pizza4I never throw away the leftover sauces from my dishes. Even if I only have a little, they are like little flavor bombs to be used in all sorts of ways. Today’s lunch consisted of Naan bread topped with sauces from last week. I reserve them in little containers and freeze them to be recreated another day. No waste! When you put love into your food, throwing away a great sauce is like throwing away something you treasure. Just for this reason, you will see me finding creative ways to serve up that little morsel of goodness.

Without a doubt, pizza is one of the easiest and most versatile ways to re-purpose your goodies. Today I used two different sauces to make two different flavor-profile pizzas. One pizza was based on the chicken from last week, Roasted Tomato, Tarragon Cream Sauce with Italian Sausage and Sherry
and the other is from an earlier chorizo tomato sauce that was frozen before my sister and I began this venture. No worries, I will make it again and give you the recipe. Today is about the sauce re-use.

For the Roasted Tomato, Tarragon Cream Sauce with Italian Sausage and Sherry, I topped the Naan bread with Gruyere cheese, caramelized onions and for an extra crunch and punch…French fried onions, (like the ones from that string bean casserole). On the chorizo sausage pizza, I used a simple blend of Pecorino Romano, sharp cheddar and provolone. I added hot peppers under the cheese for a Hot surprise, but that is optional.

The lunch was like a whole new meal with love from another day. Now it is love for today! Bon Appetit…
