I recently picked up a bag of dried wild blueberries and wasn’t sure how I was going to use them until I traveled down the baking aisle and saw the white chocolate chips…then it hit me – cookies! The tartness of the blueberries work perfectly with the sweet white chocolate in these yummy cookies…
Blueberry & White Chocolate Chip Cookies
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 sticks softened butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 teaspoon vanilla
8 oz pkg Dried Wild Blueberries
12 oz pkg White Chocolate Chips
Heat oven to 350°F. Combine flour, salt and baking soda in a mixing bowl. In a larger mixing bowl, using an electric mixer, cream butter and sugar until fluffy. Add eggs and vanilla. Beat in flour mixture. Stir in blueberries and white chocolate chips by hand. Drop onto baking sheet by rounded teaspoon. Bake 10-14 minutes until center is set. Allow to cool slightly before eating.
