Tacos Al Pastor


It’s Taco Tuesday! In reality Tacos Al Pastor are made on a Spit…pork is grilled on a rotisserie and the meat is sliced off like they do when serving a Gyro…but I don’t have a Spit…or a rotisserie even…so I make mine in a slow cooker. No hassle…just delicious!

Tacos Al Pastor
3 lbs boneless pork shoulder
3 garlic cloves, minced
1 tablespoon oregano
1 tablespoon cumin
1 tablespoon chili powder
1 tablespoon soy sauce
1 tablespoon white vinegar
1 teaspoon salt
1 pkg Goya Sazón con Culantro y Achiote seasoning packet
3 limes
1 cup pineapple juice
2 chipotles in adobo sauce
extra virgin olive oil
2 red onions
1 fresh pineapple
fresh cilantro
Queso Fresco
Flour or Corn tortillas

Cut pork shoulder into large pieces and place in the bottom of a slow cooker. Place the minced garlic, oregano, cumin, chili powder, soy sauce, white vinegar, salt, Goya seasoning mix, the juice of one lime and the pineapple juice in a medium jar with a lid. Put the lid on and shake vigorously. Pour sauce over the pork in the slow cooker and mix gently until all pork is covered with the sauce. Tuck in the two chipotles (add more if you like it spicy!). Put the lid on and turn on Low for 8-10 hours or High 4-6 hours. Remove pork and turn off the slow cooker. Drain the sauce into a medium saucepan and bring to a boil; reduce heat to medium and simmer ~ 10 minutes. Shred the pork and add back into the slow cooker. Pour the sauce back into the slow cooker over the shredded pork; keep warm.

Meanwhile, slice the red onions and the fresh pineapple into round discs. Brush with extra virgin olive oil and place on a hot grill pan; grill both sides until tender and grill marks are nice and brown. Remove from grill pan and cut the ends off of the grilled pineapple and slice into bite-sized pieces. Crumble the Queso Fresco and quarter the remaining limes. To serve: heat the tortillas in a hot skillet on both sides until slightly browned; top with seasoned pork, grilled red onion & pineapple, crumbled Queso Fresco, fresh cilantro and a squeeze of lime juice. Delicious!!
