I love to have friends over for lunches and this is the perfect summer soup dessert. It’s like having a strawberry shortcake with just a little cake and a lot of strawberries…scrumptious!
Strawberry Soup With Angel Food Cake Croutons
6 cups strawberries, quartered
1/4 cup sugar
1 cup orange juice
1/3 cup Triple Sec
1 container frozen light Cool Whip
1 Angel food cake, cut into crouton size pieces
3 Tbs salted butter
In a bowl add the strawberryies, sugar, orange juice and Triple Sec and stir all the ingredients together. Refrigerate for about 2 hours so the strawberries will soften and release their juice.
In a skillet, heat the butter to melt it and lightly toast the Angel food cake cubes until they are lightly toasted.
Put the strawberry mixture into a blender along with half of the container of Cool Whip and blend until smooth. Pour into small bowls or parfait glasses and serve with the croutons on top… Delicious!
