Buffalo Chicken Salad

When my husband works from home I have to come up with some clever lunches to keep him happy. This is one of his favorite salads – sometimes we’ll order it from a local restaurant, Blue Plate, and sometimes I’ll make it quick at home…It’s so easy to put together…

Buffalo Chicken Salad
8 Tyson Buffalo Chicken Strips
2 large eggs
1/2 cup diced plum tomato
1/2 cup diced cucumber
1/4 cup Hormel bacon pieces
2 oz blue cheese or gorgonzola wedge
2 cups chopped Romaine lettuce
2 cups chopped Red Leaf lettuce
Marie’s Chunky Blue Cheese Dressing

Prepare Buffalo Chicken Strips as package directs. Meanwhile place the eggs in a small pot of water and bring to a boil. Simmer 20 minutes or until eggs are hard boiled. Cool and peel eggs and slice into quarters. To assemble salad: divide the lettuce leaves between two plates. Layer with diced tomato, diced cucumber, bacon pieces, Buffalo Chicken Strips and a portion of the blue cheese wedge. Drizzle with the Blue Cheese Dressing. Makes two servings.
