We are still enjoying summer poolside and I love to have my friends over several times a month to sip cocktails and have appetizers. I have learned to let the girls bring some of the goodies… but I also like to have a few goodies of my own. So here is a little snack I made for one of our poolside afternoons. Continue reading

Mediterranean Hummus Platter: Revisited

Today I’m revisiting one of my favorite summer platters – this one is perfect to serve at your next barbecue…Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. The crock pot is essential for this task and if you start them before you go to bed they’re done by morning. I store them and use them for all kinds of wonderful dishes…Hummus of course being the #1 motivation. Continue reading
Buffalo Chicken Salad

When my husband works from home I have to come up with some clever lunches to keep him happy. This is one of his favorite salads – sometimes we’ll order it from a local restaurant, Blue Plate, and sometimes I’ll make it quick at home…It’s so easy to put together… Continue reading
Taverna Greek Salad

We have a wonderful Greek restaurant in our area that serves truly delicious food…Estia Taverna in Marlton is a restaurant I would highly recommend to anyone who asked…they have a Greek Salad on the menu that is made of the simplest ingredients…ripe tomatoes, sliced green peppers & cucumbers, thinly sliced red onions, marinated green & black olives and fresh feta…all combined in a simple vinaigrette…boy does it pack a powerful flavor punch…Summer is the perfect time to pick up these same ingredients at your local farmer’s market and make it fresh in your own kitchen…here’s how… Continue reading
Minty Blueberry, Cucumber & Creamy Goat Cheese Salad

If you have a Wegmans in your area you’ve seen a version of this salad before. I’m not a fan of store bought dressings, I love to make my own. When recipes call for a brand of dressing I go off the grid. I also believe that every recipe can be made even better. Well, I took the idea of blueberries and cucumbers from a picture and made it my own! It was a huge hit with my family and a real winner in my book! Great for the 4th of July, great for summer, great for parties and great for you! Continue reading
Turkey Burger With Cucumber Yogurt Sauce

This is a dish I’ve been thinking about for a while now. I used to make it for my kids when they were teenagers. It was always a good go-to when they were on the run. I made it for myself today and it was as good as I remember. Simple and refreshing. I used to put it on a pita for them. Continue reading
Roasted Gazpacho
I love using the veggies in my garden every summer. This soup is so good and if you don’t have a garden, you can pick up all these great veggies at your local farmers market. I roasted most of the veggies – it’s so good, so healthy… I could eat this every day. Continue reading
Cocktail Corner: Vegetable Bloody Maria

I love a good tomato juice… and if you add alcohol, well then you have a cocktail. We all have had a Bloody Mary, but this is a Bloody Maria. The difference is Tequila! Also I added blended tomatoes and cucumbers for extra body. It was oh so good… Continue reading
Cucumber Salad With Homemade Garden Fresh Ranch Dressing

If you follow Linda and I, you’re starting to get to know us by now. I think you know I’m a huge fan of using the herbs in my garden. I have wanted to post pictures of my beautiful gardens, but to be honest, the rain has been overwhelming this summer and our weeds are a constant battle. The plants are beautiful, but so are the weeds. Lol! Linda visited last week and I gave her a tour of the gardens, so perhaps she will comment on all the beautiful plants growing. Since I love a good cucumber salad, today I used herbs and onions that I picked in the rain. Continue reading
