Salmon Canape Bites

Salmon Canape Bites

We are still enjoying summer poolside and I love to have my friends over several times a month to sip cocktails and have appetizers. I have learned to let the girls bring some of the goodies… but I also like to have a few goodies of my own. So here is a little snack I made for one of our poolside afternoons. Continue reading

Mediterranean Hummus Platter: Revisited

Mediterranean Hummus Platter
Today I’m revisiting one of my favorite summer platters – this one is perfect to serve at your next barbecue…Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. Minty Blueberry, Cucumber & Creamy Goat Cheese Salad

Minty Blueberry, Cucumber & Creamy Goat Cheese Salad
If you have a Wegmans in your area you’ve seen a version of this salad before. I’m not a fan of store bought dressings, I love to make my own. When recipes call for a brand of dressing I go off the grid.  I also believe that every recipe can be made even better. Well, I took the idea of blueberries and cucumbers from a picture and made it my own! It was a huge hit with my family and a real winner in my book! Great for the 4th of July, great for summer, great for parties and great for you! Continue reading

Cucumber Salad with Homemade Garden Ranch Dressing

If you follow Linda and I, you’re starting to get to know us by now. I think you know I’m a huge fan of using the herbs in my garden. I have wanted to post pictures of my beautiful gardens, but to be honest, the rain has been overwhelming this summer and our weeds are a constant battle. The plants are beautiful, but so are the weeds. Lol! Linda visited last week and I gave her a tour of the gardens, so perhaps she will comment on all the beautiful plants growing. Since I love a good cucumber salad, today I used herbs and onions that I picked in the rain.    Continue reading
