The Cookie Jar: White Chocolate Peppermint Cookies

With Christmas coming up next week, Heidi and I are running around, prepping and getting everything ready! In all the hustle and bustle of the season sometimes you just need a day off with your girlfriends swapping cookie recipes and spending time catching up! For this year’s Cookie Exchange I made these delightful White Chocolate Peppermint Cookies (at the suggestion of my big brother Rob – thanks Rob!) They were a big hit so they’ll be added to The Cookie Jar! Be safe and enjoy the Holidays!

White Chocolate Peppermint Cookies
1/2 cup softened butter
1/2 cup softened cream cheese
3/4 cup brown sugar
3/4 cup sugar
2 teaspoons vanilla
2 eggs
2 1/4 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon salt
2 – 11 oz bags white chocolate chips
1 – 10 oz bag Ghirardelli Peppermint Chunks
red sugar sprinkles

Heat oven to 350°F. In a large mixing bowl combine the butter, cream cheese, sugars and vanilla. With an electric mixer, blend until creamy (~ 2 minutes). Add the eggs. Blend for another minute. Combine the flour, baking soda, baking powder and salt. Slowly add to the sugar mixture and blend with the electric mixer between each addition. Blend until combined. Hand-stir in the one bag of white chocolate chips and 1/2 of the bag of peppermint chunks. Prepare a cookie sheet with parchment paper. Drop the batter by rounded teaspoons onto cookie sheet approximately 2″ apart. Bake in heated oven 12-13 minutes until set. Remove from oven; cool slightly. Place remaining peppermint chunks in a food processor and process into smaller chunks. Place the second bag of white chocolate chips in a microwave-safe bowl; heat for one minute, then stir until melted. Working quickly, scoop a bit of melted white chocolate on about half of the top of each cooled cookie – quickly sprinkle with a little red sugar sprinkles and top with a bit of the smaller chunks of peppermint. Place on waxed paper until white chocolate hardens. Makes approximately 36 cookies. Use any remaining peppermint chunks in your next cup of coffee for a bit of a holiday change!
