Spicy Broccoli, Cauliflower & Onion Soup
When we harvested our broccoli this year I froze a fair amount for days like this…the ones where you don’t have a lot of time. This is the perfect soup to make on those crazy active days without sacrificing great flavor. I have three secret ingredients that I use to give this soup depth and warmth. It is very delicious so if you’re in the mood for a great soup and you don’t have a lot of time…this is a go-to. Also if you want to use up the stalks after the florets are used this is also good…

Spicy Broccoli, Cauliflower & Onion Soup
2-3 cups fresh broccoli cut up
2-3 cups fresh cauliflower cup up
2-3 Tbs dried onion flakes (secret #1 adds depth)
1 tsp celery salt (secret #2 adds more depth)
2 cups chicken stock (more if needed)
1/2 cup half and half
3/4 (+) cup shredded pepper jack cheese (secret #3 adds warmth)
salt & pepper

In a sauce pot with a lid add the broccoli, cauliflower, onion flakes and chicken stock. Cover and cook until fork tender. Place the contents in a blender and purée until smooth. Make sure to blend in small sections because the contents will be hot. Return the purée to the sauce pot and add the half and half and the shredded cheese. Stir until smooth; add salt & pepper to taste and a little more cheese on top. Delicious!
