Mediterranean-Style Bowl

I had a craving for a big bowl of salad – so I checked out my fridge to see what I could add to make it super yummy… I ended up roasting cauliflower with the ‘power’ spices and adding potatoes, zucchini and red onion along with a few shavings of Parmesan cheese… any dressing can top it off! Super delicious AND super healthy! And with the leftover veggies I’ll be sharing an awesome taco recipe next time…

Roasted Vegetable Gnocchi

Out to dinner one night I had a yummy veggie gnocchi made with zucchini – it was really good – so of course I just had to make it at home for everyone else to enjoy…I added cauliflower & carrots to the mix for more flavor. Really, is there anything better than roasted carrots? Once the gnocchi is cooked, everything is combined in a lovely tomato-basil sauce…delicious!

I saw a Farro Salad similar to this on the menu at Davios NYC and made a note to try something like it at home…I roasted the veggies to bring out their flavor and dressed the salad with a Lemon Garlic Vinaigrette that’s super yummy. When we harvested our broccoli this year I froze a fair amount for days like this…the ones where you don’t have a lot of time. This is the perfect soup to make on those crazy active days without sacrificing great flavor. I have three secret ingredients that I use to give this soup depth and warmth.
