Pork Soft Tacos

It’s TACO TUESDAY! Today we’re revisiting one of our family’s favorite taco meals…Pork Soft Tacos…we go back to these again and again because they just can’t be beat!

Pork Soft Tacos
2 tablespoons extra virgin olive oil
2 lbs ground pork
1 tablespoon paprika
1 tablespoon cumin
1 1/2 teaspoon salt
fresh ground pepper
1 large Spanish onion, chopped
10 oz box frozen corn
1/2 cup fresh chopped cilantro
2 limes, cut in wedges
12 tortillas (not the big ones!)
Marie’s Chipotle Ranch Sauce
Pico de Gallo Salsa
1 1/2 cups shredded cheddar cheese

Heat oven to 300°F. When oven is hot, wrap tortilla in aluminum foil and place in oven until everything is ready. Heat one tablespoon oil in a large skillet on high heat. Brown ground pork in hot oil 5-7 minutes, chopping pork as small as possible. Stir in paprika, cumin, salt & pepper. Lower heat to low, put lid on and allow to simmer a few minutes to make sure pork is fully cooked.

Meanwhile, heat remaining oil in a medium skillet on high heat. Add chopped onion, lower heat to medium-low and sauté onion for five minutes, stirring frequently. Add in corn and sauté three minutes. Add chopped cilantro and squeeze in 2-4 lime wedges. Lower heat to low and put lid on until ready to assemble.

Remove tortillas and assemble tacos: Spread Chipotle ranch sauce on each tortilla, follow with a layer of salsa, pork, corn mixture, shredded cheddar cheese & spritz of lime.
