It’s Burger Time! For today’s burger we have a hearty burger topped with roasted tomatoes, fresh sliced avocado, maple bacon, cooper sharp cheddar cheese on a rustic Portuguese roll that’s been slathered with a tasty bacon-mayonnaise…big, juicy, flavorful…who wants one!?
Burgers with Roasted Tomatoes, Avocado & Bacon Mayo
1 1/4 lb ground beef, veal, pork mix
1 tablespoon Montreal Steak Seasoning
1 tablespoon A1 steak sauce
6-8 slices maple bacon, one reserved for mayo
2 plum tomatoes, sliced
extra virgin olive oil
salt & fresh ground pepper
1 ripe avocado
4-8 slices cooper sharp cheddar cheese
4 rustic Portuguese rolls
1/2 cup mayonnaise
3 tablespoons reserved bacon drippings
Preheat oven to 400°F. Place the ground meat in a large bowl. Add the Montreal steak seasoning and the A1 steak sauce. Mix well and shape into four large burgers. Place the tomato slices on a baking sheet; drizzle with olive oil and season with salt and pepper. Roast in heated oven 10-15 minutes.
Cook the bacon until crisp; reserve 3 tablespoons bacon drippings and dice one slice of bacon for Bacon Mayo.
Cook burgers 4-6 minutes on each side in a hot grill pan.
Top with cooper sharp cheese and allow cheese to melt slightly. Meanwhile slice the avocado in half, remove the pit, scoop out the flesh and slice. In a small bowl whisk the mayonnaise with the bacon drippings and chopped bacon pieces.
To assemble: Slice Portuguese rolls, slather both sides with bacon mayo and layer with burger & cooper sharp cheese, avocado, roasted tomato slices, bacon and top with Portuguese roll. Serve immediately. Delicious!
