Grilled Pear & Bacon Spinach Salad

Growing up, my Mom made a spinach salad with bacon that was always a welcome addition to the table. I actually don’t have her recipe (shame on me!) but from what I can remember it was simply spinach lettuce, crisp bacon & thinly sliced red onion with a tangy vinaigrette. To change it up a bit I decided I wanted to add a twist with the addition of grilled sliced pears and a Maple-Bacon Vinaigrette. Mom – take a look and tell me what you think!

Grilled Pear & Bacon Spinach Salad
1 Bartlett pear
4 slices thick bacon
4 cups fresh baby spinach
shredded Parmesan cheese
Maple-Bacon Vinaigrette (recipe below)

In a large skillet, cook the bacon until crisp. Save 1 tablespoon of bacon drippings.
Grilled Pear & Bacon Spinach Salad
Slice the pear into thin slices and place on a hot grill pan that has been sprayed with cooking spray. Grill 3-4 minutes on each side. Remove from heat and set aside. Make the Vinaigrette (recipe below)

Maple-Bacon Vinaigrette
1 tablespoon reserved bacon drippings
2 tablespoons apple cider vinegar
2 tablespoons real maple syrup
1/4 teaspoon salt
dash of fresh ground pepper
3 tablespoons extra virgin olive oil

In a small jar combine the reserved bacon drippings with the remaining ingredients. Put a lid on the jar and shake vigorously. Place the baby spinach on a large platter. Layer with the grilled pear slices, crumbled bacon & sprinkling of freshly shredded Parmesan cheese. Drizzle with the Maple-Bacon Vinaigrette.

Serve immediately.

  1. My mom made that same spinach salad (and I did too for years), though she added hard boiled egg too. I love this updated version your serving here! Grilled pears? Oh yeah!
