As the beautiful orange, red and yellow leaves begin to fall from their once high perch, I am feeling the chill in the air. A warm soup is on my mind. So this morning I dashed to the store to buy the ingredients for one of my quick and simple soups. Since I have the fortune and pleasure of having my hubby home for lunch, I wanted to give him a hearty bowl of love…
Hearty Chicken & Ham Soup
1 rotisserie chicken/ breast removed and chunked
1 lb ham slice/ diced
1-1/2 onion diced
2 cans diced tomatoes/ drained and rinsed
1 package sliced button mushrooms
3 cups chicken stock
1 jar Old English cheese
1 tsp dried oregano
1 Tbs olive oil
In a stock pot heat olive oil and saute onions until tender. When onions are soft then add the sliced mushrooms and continue cooking. In a separate pan heat the diced ham to bring out more of its rich flavor. Next add the juice from the rotisserie chicken, ham and tomatoes. Cook on medium-hi for about 8 minutes.
Add the chicken broth and the Old English cheese. Cook until the cheese completely melts into the soup. Right before you serve the soup add the chunked chicken breast. I topped the soup with quick homemade croutons I made from rosemary bread.

I love soup and could eat it every day. Ive never heard of ham and chicken together, but it sounds hearty and delicious!
