This morning I was really in the mood for some warm oatmeal for breakfast. I can honestly say that I never make it like it says on the box with water and salt..how tasteless!! I’m always trying to jazz it up, but today I just wanted a simple butter, brown sugar & milk oatmeal with a touch of pure maple sugar mixed in. So comforting on this cool October morning…
Maple Vanilla Oatmeal
1 cup old fashioned oats
1 1/2 cups milk
1/2 heavy cream
1 tablespoon brown sugar
1 tablespoon pure maple syrup
1 tablespoon butter
1/2 teaspoon vanilla extract
handful of mini chocolate chips (optional)
In a medium sauce pot, combine all the ingredients. Bring to a boil; reduce heat to medium and bubble softly, stirring constantly for five minutes.
Pour into two shallow bowls and sprinkle with a little brown sugar. I also add a few mini chocolate chips; they melt into the oatmeal and create a chocolate flavor boost. Enjoy!
