Buttermilk French Toast

This is a great way to use leftover buttermilk! Not just a great way…a delicious way! When I made Buttermilk Blueberry & Chocolate Muffins I bought a quart of buttermilk and used only one cup…hating for food to go to waste I thought of ways to use the leftovers…here’s one way to use it up for breakfast…

Buttermilk French Toast
1/2 loaf of day old French bread (or use your favorite)
2 eggs
1 cup buttermilk
1/2 teaspoon vanilla
1/2 teaspoon sugar
1/2 teaspoon salt
sprinkle of cinnamon
margarine (for cooking)
powdered sugar (for finishing)

Slice the bread. Place the eggs, buttermilk, vanilla, sugar & cinnamon in a shallow dish.

Heat a pat of margarine in a large skillet on medium-high heat. Whisk the eggs and buttermilk mixture until smooth. Dip the slices of bread in the mixture on both sides and place in heated pan.Β Cook until lightly browned on each side. Remove from heat and repeat with remaining slices of bread. Sprinkle with powdered sugar when serving. We also love maple syrup or cinnamon-sugar and butter on ours…what do you like on yours!?
