If you’re in the mood for something light and healthy, salmon fits the bill! It’s a very mild but flavorful fish and with the addition of these sautéed cherry tomatoes, sweet onion & basil with the balsamic vinegar it’s not just flavorful but delicious…
Salmon & Balsamic Cherry Tomato, Sweet Onion & Basil
4 Salmon fillets
1 tablespoon extra virgin olive oil
1 sweet onion, diced
2 garlic clove, minced
handful cherry tomatoes
1/4 cup fresh basil, sliced
1 tablespoon Balsamic vinegar
Season the salmon fillets with a little extra virgin olive oil, salt and pepper and set aside. In a medium skillet, sauté the onion and garlic until tender (~ 8 minutes) on medium heat. Toss in the cherry tomatoes.
Cover the skillet with a lid and lower the temperature. Simmer until cherry tomatoes burst. Add the basil and vinegar. Season with salt & pepper to taste. Give it a final stir and keep it covered while cooking the salmon. Meanwhile, heat olive oil in a cast iron skillet. Cook seasoned salmon 3-4 minutes on each side.
Place salmon fillets on platter and top with the Balsamic Cherry Tomato-Sweet Onion & Basil.
