Salad is a great lunch or a side…here’s a tasty and easy one sure to please…Enjoy!
Romaine & Red Apple Salad
3 cups Romaine lettuce
2 cups Red Leaf lettuce
1 or 2 sweet Red apples, unpeeled
1/2 cup toasted walnuts pieces*
1/4 cup Gorgonzola cheese crumbles
Honey Dijon Vinaigrette (recipe below)
Wash and dry the lettuces; place in a large bowl. Core and dice the red apples. Toss the apples and the walnuts and the Gorgonzola with the lettuce in the bowl.
Pour on the Honey Dijon Vinaigrette or dressing of your choice.
Honey Dijon Vinaigrette
1 tablespoon Dijon mustard
1 tablespoon honey
1 tablespoon Balsamic vinegar
1 teaspoon salt
fresh ground pepper (to taste)
1/2 cup extra virgin olive oil
In a medium mason jar, combine all the ingredients. Put on the lid and shake well. Use as needed.

If you don’t like Gorgonzola you can use chunks of cheddar or your favorite cheese, however if you’re lactate intolerant substitute some nuts! 🙂

We are dairy free because of allergies – but walnuts might be nice and would add protein!
