Peruvian-Style Bowl

These hearty & healthy bowls have become very popular…I love that you can combine just about anything and it ends up tasting great! For today’s meatless meal I made a big bowl filled with fresh baby spinach, red quinoa, roasted sweet potato, grilled corn, black beans, walnuts & feta cheese…topped it all off with a delicious dressing and everyone was happy! The Cookie Jar: Walnut Butterballs

Walnut Butterballs
Years ago when we were young my mother would organize cookie making days during the Christmas season. She had a ton of wonderful cookie recipes that my sisters and I would make with her – it was so much fun! It’s been years since I’ve had to make more than a batch of cookies…but since I was recently invited to join in a Cookie Exchange Party I had the opportunity to make these delightful Christmas-time cookies that my mom used to make with us. What made it even more special is that I spent the day making these with my friend Kristin. Thank you Kristin for opening up your kitchen for a special day of cookie-baking! Continue reading

Farro, Broccoli, Apple & Walnut Salad

Farro, Broccoli, Apple & Walnut Salad

I love creating new combinations for salads…I saw a little bit of farro left in the pantry and decided that I wanted to use it…so on the menu today is a hearty Farro, Broccoli, Apple & Walnut Salad…the dressing is a Maple Walnut-Mayo combination that just pushed it over the top! The other great thing about this salad is that it gets better as it sits… Continue reading

Waldorf Salad Wraps

Waldorf Salad Wraps

I love New York City in the Spring! The hustle and bustle of the crowds, the sights and colors…so exciting! My husband and I like to have a drink in the Waldorf-Astoria lounges – either the Bull & Bear or Peacock Alley…so elegant and absolutely lovely. For today’s post I’m sharing a take on a special salad that was created back in the 1890s by the maître d’hôtel Waldorf, Oscar Tschirky. This delightful salad has diced apples, thinly sliced celery, crunchy walnuts and is mixed with a mayonnaise-based sauce. I add a handful of seedless black grapes and wrap it up in Boston lettuce leaves for a light lunch…truly delicious! Continue reading

Honey, Lemon, Feta & Walnut Pasta

Honey, Lemon, Feta & Walnut Pasta

Today is Ash Wednesday – the beginning of the 40 days of Lent for all Christians (not counting Sundays). During these 40 days of repentance we reflect on our lives, the things we have done and our transgressions; praying for forgiveness and observing specific days of fasting and abstinence from meat. Traditionally during Ash Wednesday we fast and abstain from meat, eating just one full meal. We observe Lent to mirror Christ’s 40 days in the desert where He endured temptation.

In light of today’s abstinence and fasting I have prepared a meat-free dish that is healthy, tasty and very filling. Continue reading

Seasoned BBQ Chicken & Feta-Cranberry-Walnut Salad with Balsamic Vinaigrette

IMG_3502

There are a million and one ways to cook chicken…I think there are more chicken recipes than any other recipe! I try to serve it at least once or twice a week; chicken breasts one night and dark meat another. And since there are so many ways to cook it we don’t have to have the same chicken over and over again. But some recipes stick with you more than others. Like this one! Chicken thighs and drumsticks seasoned, roasted then slathered with bbq sauce. Moist & juicy! Who doesn’t like that? Served with a fabulous salad made with mixed greens, dried cranberries, feta & caramelized walnuts topped with an incredible Balsamic Vinaigrette…Let me know if you like them too! Enjoy!
