White Gazpacho

Cold soups are definitely a summertime thing. As a cucumber lover, I started making this soup many years ago. It’s a great soup when you have the girls over poolside, or on the deck. Today I had this awesome soup while sitting outside on our back porch with the love of my life. It’s a cloudy day but still beautiful. The view from our home is priceless!!!  

White Gazpacho
3 cucumbers, pealed, seeded and diced
1 1/2 cups chicken stock or vegetable stock
1 cup plain yogurt
2/3 cup sour cream
1/2 avocado
2 cloves garlic
salt and pepper
Hawaiian Black salt

In a blender place cucumbers, (peeled, seeded and diced), chicken stock, yogurt, sour cream, avocado, and salt and pepper.

Blend until smooth. Pour in serving cup or bowl and top with Hawaiian Black Salt. I recommend this salt for it’s mineral flavor and depth.

  1. I must try this, I really love cucumbers AND gazpacho. And to be even more timely, hubby got a bag of black Hawaiian salt as a gift and we didn’t know what to do with it yet! Thanks!
