1/4 tsp black pepper
1/2 tsp onion powder
3 medium sized onions sliced thick
1/2 cup olive oil
2 cans beef Consomme
1/8 cup sherry

Preheat oven to 375 °F. Heat cast iron skillet on medium high heat and add oil. Mix flour, garlic salt, celery salt, onion powder and pepper together in a mixing bowl. Dredge each piece of beef liberally in flour and place carefully in skillet. Cook for about 3 minutes on each side. Next add both cans of stock and sherry. Slice onions and add on top.

Cover with tin foil and place in oven on middle oven rack. After cooking at 375 for 1 hour, turn oven down to 300 °F and cook an additional hour. Make a pile of mashed potatoes because you will want all this gravy.
