Zucchini Bread

It’s April 1st already…Boy does time fly by…Slow down with a slice of Zucchini Bread and a cup of tea for breakfast!

Zucchini Bread
3 cups flour
1 1/2 cups sugar
1 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking powder
3/4 teaspoon baking soda
2 cups shredded zucchini
1 cup chopped pecans or walnuts
3 eggs
1 teaspoon vanilla
1 cup canola oil

Preheat oven to 350 °F. In a large bowl, combine flour, sugar, cinnamon, salt, baking powder and baking soda. Add shredded zucchini. In a small bowl, whisk eggs with vanilla; then add into zucchini batter. Pour in canola oil and stir until moistened. Spoon batter into a greased loaf pan. Bake one hour or until knife inserted into the center comes out clean. Cool about ten minutes then remove from pan and slice. Spread with a little butter and Enjoy!
