Rosemary Shrimp Skewers With Romesco Sauce
Who doesn’t love brunch, and not just for the Mimosas and a yummy Bloody Mary! When I had a Brunch recently I wanted to serve the shrimp a little different than the usual cocktail; a way that would still impress, could be made in advance, be without much effort and still taste delicious. I remembered a shrimp dish I made a long time ago using rosemary stalks as the skewers. My garden still has lots of rosemary. Happy Easter and good morning!!! This morning I’m up early to make baked eggs… I call them Maria’s Eggs, because the first time I ever had baked eggs was at my brother and sister-in-law’s house. They were yummy and ‘my favorite’, simple. I loved the concept of baking the egg, so I started to play with all the different ways I could serve this little gem. Feather Pancakes
It’s Sunday morning…it’s still cold outside. This calls for warm syrupy pancakes for breakfast! Years ago my mom’s friend Fay gave her a recipe for homemade pancakes. Although they tasted really good for some reason they always came out flat. With some changes to the original recipe I was able to add fluffiness to the pancakes. And with the addition of vanilla they became our favorite weekend pancakes. Sometimes we add chocolate chips; sometimes it’s sliced bananas, strawberries or blueberries.
